ingredients
- 1 (15-oz) can chickpeas
- 2 large carrots, chopped
- 2 tablespoons amaranth flour
- 1 teaspoon baking powder
- 1/3 cup olive oil
- 1/2 cup pepitas
- 2 cloves minced garlic
- 2 tablespoons fresh cilantro
- 1 teaspoon cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 1 teaspoon salt
Method
Step 1
Add all ingredients to food processor and blend until well combined. Add a little more aquafaba if too dry. Transfer to bowl. Mix in 2 Tbsp whole flax seeds. Form small cookie-like shapes and bake on parchment at 350 F for about 35 mins until golden brown. (Flip them over after 15mins.)
