Chickpea Carrot Amaranth Falafels with Avocado Walnut Pesto. Vegan, gluten-free (without the pita) These falafels are so light and fluffy. I felt inspired to use amaranth flour in this recipe and I'm loving the texture. -@cookingforpeanuts

  • 1 (15-oz) can chickpeas
  • 2 large carrots, chopped
  • 2 tablespoons amaranth flour
  • 1 teaspoon baking powder
  • 1/ 3 cup olive oil
  • 1/ 2 cup pepitas
  • 2 cloves minced garlic
  • 2 tablespoons fresh cilantro
  • 1 teaspoon cumin
  • 1/ 2 teaspoon ground coriander
  • 1/ 2 teaspoon chili powder
  • 1 teaspoon salt

Method

  • Step 1

    Add all ingredients to food processor and blend until well combined. Add a little more aquafaba if too dry. Transfer to bowl. Mix in 2 Tbsp whole flax seeds. Form small cookie-like shapes and bake on parchment at 350 F for about 35 mins until golden brown. (Flip them over after 15mins.)
