Empanada dough
ingredients
- 3 cups all purpose flour
- 1/4 teaspoon salt
- 1/3 cup sugar
- 1 cup cold unsalted butter
- 2 large eggs
- 2 to 3 tablespoons cold water
Egg wash
ingredients
- 1 yolk
- 1 teaspoon water
Method
Step 1
Add the flour, salt, and sugar in a food processor and pulse to combine ingredients.
Step 2
Slice the butter into 12 pieces and add it to the food processor. Pulse to combine dry ingredients and butter. You should get a crumbly texture.
Step 3
Whisk the egg in a separate bowl and add it to the food processor.
Step 4
As the food processor is mixing your ingredients, add the cold water, 1 tablespoon at a time.
Step 5
Take the dough out of the food processor and wrap it using plastic wrap and place in the fridge at least 1 hour before you assemble the empanadas.
Step 6
Lightly flour a work surface and roll out the dough.
Step 7
Use a round dough cutter to cut the circles, add the fruit, and close the empanada by gently pressing down using a fork.
Step 8
Place them on a baking sheet with parchment paper.
Step 9
Brush with egg wash. Bake at 400°F for 20-25 minutes. Let the empanadas cool down for about 8 minutes
Step 10
Fill a piping bag with Nutella®. Use a long puff nozzle tip and slowly fill the empanadas with Nutella®. I find it best to insert the tip in a soft spot and move it around as you’re filling up the empanada to ensure the entire empanada is filled.
