ingredients
- 3 tablespoons paprika
- 3/4 tablespoons salt
- 2 teaspoons ground black pepper
- 1 tablespoons chopped garlic
- 1 teaspoons dried thyme
- 1/2 cups honey or maple syrup
- 1/4 cups cider vinegar or red wine vinegar or lemon juice
- 3 tablespoons olive oil
- 1 onion, peeled and half, layers separated
- 1 1/3 kilogram pork shoulder (with some fat) cut into 3.4 slabs
- water to blanch pork
Method
Step 1
In a medium bowl, mix together paprika, salt, pepper, garlic, thyme.
Step 2
Into the spice mix, pour oil, vinegar, honey and stir to form a paste.
Step 3
Clean the inside bowl of the slow cooker and layer the bottom with the slices of onion.
Step 4
Blanch the pork shoulder to get rid of the bits and pieces: boil a medium pot of water. When boiling, plunge the pieces of pork into the water and turn down flame to simmer about 2-3 min. Remove and transfer to the slow cooker inner pot.
Step 5
Place the slabs of pork shoulder on the onion slices.
Step 6
Pour the honey spice mixture over the pork, letting some drip down to the onions. Do not add any water.
Step 7
Turn on the slow cooker on High for 1 hour and then low for 6-8 hours, depending on how soft you like your pulled pork.
Step 8
After cooking to desired softness, turn off heat and rest 1/2 hour. Shred with 2 forks. Mix with meat the gravy that has oozed from the meat.
Step 9
Use with sandwiches, mashed potatoes, pasta and salad.
