Spicy Breakfast Sausage Frittata
Serves 4-6
Ingredients:
1 lb. Pederson’s Spicy Breakfast Sausage
8 large eggs
8 oz. fresh baby spinach (if substituting frozen spinach, defrost it first and squeeze out any excess water)
¼ red onion, chopped
1 tbsp. avocado oil
1/2 tsp. black pepper pepper
1 avocado

Instructions:
Over medium heat, cook the sausage in a skillet until browned. Drain out any excess grease, then add in the onion and spinach. Cook together, seasoning with salt and pepper and stirring occasionally, for about 3 minutes. In a bowl, crack each of the eggs and whisk. Pour the eggs on top, and don’t stir it anymore. Over medium heat, allow the bottom to set without stirring at all, then lower the heat and cover. Cook for another 5-6 minutes (you could also put it under the broiler) or until cooked through. Slide it out of the pan and slice. Top with avocado, sliced radishes and tomatoes.
