With asparagus in season this is a great way to switch it up for breakfast like @Cookathomemom did here! Fresh and delicious and when asparagus is out of season switch to fresh green beans or another seasonal vegetable.

Asparagus Omelet

Ingredients

4 eggs
1 tsp. avocado oil
1/4 lb. blanched and trimmed asparagus
1 avocado
1-2 tsp. lemon juice
salt, pepper, crushed red pepper to taste

Method

Heat oil in a medium skillet over medium heat. Pour beaten eggs int he skillet and season with salt and pepper. As it cooks, gently bring the edges of the omelet to the center with a spatula. Once the eggs stop filling in the skillet, lay the asparagus across the center and flip half of the omelet over. Allow to cook 2-3 more minutes (covering if necessary). Mash the avocado with lemon juice and season to taste. Serve with the omelet.
