Chorizo and Veggie Frittata

ingredients

  • 8 ounces chorizo sausage
  • 4 ounces cherry tomatoes, halved
  • 1 onion, sliced
  • 2 tablespoons cilantro, chopped
  • 8 eggs
  • 1/2 cup almond milk

Method

  • Step 1

    Preheat oven to 400ºF.

  • Step 2

    Heat a lightly oiled cast iron skillet on the stove. Pan fry the chorizo sausage then add cherry tomatoes, onion and cilantro.

  • Step 3

    Whisk eggs with almond milk, then pour into pan with sausage, onion and cilantro. Bake fro 15 minutes, until egg is set.
