Honeynut Squash Soup

Ingredients:
2-3 friends to shop, cook, and eat with
2 Tbsp olive oil
1 onion, peeled and chopped
2 shallots, peeled and chopped
1 garlic clove, peeled and chopped
2 delicata squash, seeds removed and chopped
2 honeynut squash, seeds removed and chopped
2 medium-sized carrots, chopped
Handful of fresh thyme
1 can unsweetened coconut milk
Water
Pinch of sea salt
Directions:
Go to the greenmarket with friends, and find in-season foods that inspire you
Bring everything home and settle in for fun conversation and a bit of chopping
Eventually, start cooking... In a large stock pot, heat the olive oil on a medium high heat. Add the onion, shallots, and garlic and saute for 5 minutes until softened.
Add the chopped winter squashes and carrots and let this pan-roast for 15-20 minutes, stirring occasionally to prevent burning.
Pour in the coconut milk, and a tin full of water, bring to a boil, then cover and simmer for 20 minutes.
Ladle into bowls, garnish as you like, and enjoy!!
