Sunny Side Up Egg Avocado Buckwheat Toast

"My spa holiday is over and I’m back home. Had a great breakfast at the spa hotel and a second one hom for dinner. Glutenfree buckwheat avocado toast topped with one egg sunny side up, drizzled with chili flakes, herbs, s & p. Hope everyone’s weekend started right off!"

  • 1 slice buckwheat bread, toasted
  • 1/2 avocado, mashed
  • 1 large egg
  • 1 teaspoon avocado oil
  • Sprinkle of chili flakes
  • Sprinkle of dried herbs
  • Sprinkle of salt and black pepper


  • Step 1

    Heat oil in a skillet on the stove over medium heat. Crack the egg into the pan and cook for 2-5 minutes, or until desired doneness.

  • Step 2

    Spread the mashed avocado onto a piece of freshly toasted buckwheat bread.

  • Step 3

    Top with the sunny side up egg along with a sprinkle of chili flakes, dried herbs, salt and pepper.
