ingredients
- 1 block tofu
- 2 bunches soba noodles
- 1/2 cup Annie's Goddess Dressing
- 2 tablespoons soy sauce
- 2 tablespoons hoison sauce
- 1 cup edamame
- 1/4 red cabbage, shredded
- 2 tablespoons pickled ginger
- 1 avocado, diced
- 1 mango, diced
- 1 scallion, thinly sliced
- 1/4 cup sesame seeds
- 1 small cucumber, sliced
- 2 carrots, julienned
Method
Step 1
Cut the tofu into bite-sized cubes. Add to a bowl and top with soy and hoisin/Allow to sit while you prep the rest of the toppings.
Step 2
Heat a splash of olive oil in a skillet. When hot, add the tofu and cook until crispy on the outside edges (about 10 minutes). While you’re doing this bring a medium pot of water to boil.
Step 3
Add the soba noodles to the boiling water to cook. Have a bowl of ice water waiting & when a tester noodle tastes and feels done to you (about 5 minutes), remove the noodles and add to the ice bath to chill.
Step 4
Drain the noodles, pour some Annie’s Goddess Dressing on them and mix to coat.
Step 5
Divide noodles into four bowls. Top each bowl with the tofu, edamame, red cabbage, pickled ginger, avocado, mango, scallions, sesame seeds, cucumber and carrots.
