ingredients

  • 1/2 cup California walnuts, plus extra for garnishing
  • 1 (16 ounce) can coconut milk, frozen into cubes
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon pink salt
  • 1/2 cup plant-based milk of choice

Method

  • Step 1

    Freeze the coconut milk in an ice cube tray overnight. Chill serving glass(es) in the fridge or freezer ahead of time to maintain the frosty texture.

  • Step 2

    In a high-speed blender, combine all ingredients until smooth and creamy.

  • Step 3

    Remove chilled glass(es) from the fridge or freezer and pour in the frosty mixture. Top with additional California walnuts.

  • Step 4

    Serve immediately.
