ingredients
- 1/2 cup graham cracker crumbs, (for serving)
- 1 pound strawberries
- 8 ounces cream cheese, softened at room temperature
- 1/4 cup confectioners sugar
- 1 teaspoon vanilla extract
- Mini milk chocolate chips, for eyes
- Cinnamon candies or pink sprinkles, for nose
- Butterscotch chips, for boots
Method
Step 1
Sprinkle serving platter with graham cracker crumbs.
Step 2
Prepare the strawberries: slice off top third portion of each strawberry (these will be the Santa “hats”). Place strawberries in refrigerator until ready to use.
Step 3
Prepare the cheesecake mixture: add cream cheese, powdered sugar, vanilla extract to a mixing bowl. Mix on low to combine, scraping the sides as necessary. Transfer to a piping bag.
Step 4
Place dollop of cheesecake mixture on bottom, larger section of each strawberry. Place top portion. Place two mini chocolate chips as eyes and one red hot candy or pink sprinkle as nose, and two butterscotch chips as boots.
Step 5
Finish by topping tip of “hat” with small dollop cheesecake mixture. Place each finished strawberry on graham cracker coated serving platter. Serve immediately or store in refrigerator until ready to serve, up to 2 days ahead of time tented with aluminum foil.
