Make breakfast special with these Pistachio & Cardamom Croissants. A delicious pistachio and cardamom mixture fills 4 day old croissants. This recipe is also a great one to use on those stale pastries. The spread gives these croissants flavor, depth and creaminess.

Filling
ingredients
- 7 tablespoons softened butter
- 1/3 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon fresh ground cardamom
- 3/4 cup ground pistachios
Syrup
ingredients
- 1 cup sugar
- 1 cup boiled water
- 5 cardamom pods, smashed
- 4 day old croissants
- confectioners sugar, to dust
Method
Step 1
Preheat oven to 350Ā°F. Line a baking tray with parchment paper.
Step 2
For the syrup, add the sugar, cardamom pods and boiled water to a bowl and stir to dissolve the sugar.
Step 3
For the filling, using a hand mixer or whisk, whip together the butter, sugar, cardamom and salt until smooth. Add in the ground pistachios and mix to combine.
Step 4
Whisk the two eggs and vanilla until super smooth and silky and lighter in color.
Step 5
Slice the croissants in half. Brush the inside with the syrup and then spread a generous layer of the pistachio-cardamom filling. Place the top of the croissant on and brush with more syrup. Spread some more filling and top with some chopped pistachios.
Step 6
Arrange on prepared baking tray. Bake for 15--20minutes or until the tops are just golden brown. Dust with icing sugar and enjoy.
