Tofu Buddha Bowls

Ingredients:
1 brick tofu
2 tbsp vegetable oil
1 tbsp soy sauce
2 cups quinoa (cooked)
1 cup shredded cabbage
1 cup shredded carrots
1 cup sprouts of choice
2 purple daikon, sliced
2 watermelon radish, sliced
1 avocado, sliced
a handful of blueberries
olive oil,for serving
Directions:
Heat the vegetable oil in a pan on medium-high heat. Cut the tofu into triangles and cook on medium heat for 2-3 minutes on each side, until golden brown. Turn off the heat and add in the soy sauce.
Layer 4 bowls bowl with quinoa, shredded cabbage, carrots, sprouts, daikon, radish, avocado, blueberries, and the tofu.
Season the bowl with a little olive oil and soy sauce if desired.
