Pink Smoothie Chia Parfait
Layer 1:
2 tbsp chia seeds
1/2 cup almond milk
1/2 tsp vanilla extract
1 tsp maple syrup
Layer 2:
1 frozen banana
1/2 cup mixed raspberries and strawberries
1-2 tbsp almond milk
Toppings:
flaked coconut
fresh berries
Directions:
Mix the chia seeds, almond milk, vanilla, and maple syrup in a bowl until combine. Let sit to "gel" for 20 minutes on the counter.
Once your chia has formed a putting, place into a glass.
In a blender or food processor, blend together your banana, berries, and almond milk until it forms a thick ice cream like texture.
Pour over the chia pudding. Top with fresh fruit and flaked coconut.
