Sweet Potato Fries With Garlic And Lime Tahini

For the Sweet Potato Fries
ingredients
- 2 large sweet potatoes, cut into 1-inch strips
- 1/2 teaspoon cumin
- 2 cloves garlic, minced
- Olive oil, to toss
- Salt, to taste
For the Garlic Lime Tahini
ingredients
- 1/4 cup tahini
- 1 large lime, cut in half
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
- Cilantro, chopped, for garnish
- Salt and freshly ground pepper, to taste
Method
Step 1
Heat the oven to 450 degrees. Line a baking sheet with parchment paper, and toss the cut sweet potatoes with the garlic, cumin, a generous amount of good olive oil, and salt and pepper to taste. Bake for 25 minutes turning halfway through.
Step 2
Remove fries from the oven, and transfer to a serving plate to cool. Reserve some of the roasted, minced garlic for the tahini sauce.
Step 3
Drizzle the fries with juice of half the lime, and sprinkle with a little chopped cilantro.
Step 4
In a small bowl, combine the tahini, juice of the other half of the lime, garlic powder, olive oil, salt and pepper. Sprinkle with the extra roasted garlic. Enjoy!
