Step 1
Add red currants and maple syrup in a small saucepan over low heat, stir the mixture constantly with a heatproof spatula. Gently press the red currants to the sides of the pan to release the juices. Continue to cook the mixture until it has thickened slightly. This should take about 10 minutes. Once ready, strain the mixture thru a fine mesh shift, then stir in the lime juice.
Step 2
Add about 2 tablespoons red currant syrup, sparkling water and crushed ice to a glass. Garnish with fresh herbs and more fresh currants before serving.
