Grapefruit Bellinis

4 oz fresh grapefruit juice
4 oz prosecco or champagne
1 oz simple syrup
1 oz egg whites
1/2 oz lemon juice
In a shaker, combine the grapefruit juice, simple syrup, lemon juice and egg whites. Shake it vigorously then pour 2 ounces of champagne or prosecco into each glass. Add 2 1/2 oz of grapefruit mixture. Top the glass with a lemon peel twist.
