Banana Muffins with Nutella

  • 1 ripe mashed banana, plus more for serving
  • 1 egg
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla
  • 2/3 cup all purpose flour, gluten-free
  • 1/2 teaspoon baking soda
  • Nutella®, for serving


  • Step 1

    Preheat oven to 350* Line a muffin tin with cupcake liners.

  • Step 2

    In a small bowl, mash one ripe banana and mix in egg, maple syrup, and vanilla. Whisk until smooth.

  • Step 3

    Add in flour and baking soda and mix well.

  • Step 4

    Scoop evenly into a lined muffin tray and bake for about 20 muffins or until golden brown.

  • Step 5

    Serve sliced in half with nutella and banana slices.
