"A piadina is a traditional flat bread form the Region of Emilia Romagna in Italy. It is super simple to make and can be stuffed with endless fillings. However it is so versatile that it can become a last minute mock pizza as well!"

ingredients

  • 250 gram all purpose flour
  • 150 gram whole or 2% milk
  • 10 gram salt
  • 20 gram lard or vegetable shortening
  • 1 1/2 gram =(½ tsp) of active dry yeast OR ½ tsp baking soda

Method

  • Step 1

    Add the salt to the milk so it begins to dissolve.

  • Step 2

    Combine flour, lard and leavener in a bowl.

  • Step 3

    Add the milk and kneed for 3-5 minutes or until you can form a dough ball.

  • Step 4

    Cover the dough with a bowl or wrap with plastic wrap and let it rest for 15-20 minutes.

  • Step 5

    Cut the dough into 120-125g dough balls (this size will make a very good size piadina!).

  • Step 6

    Roll the dough VERY thin...thinner than you think!

  • Step 7

    Cook over medium heat in a sauté pan for about 3 minutes and then flip over. Cook for another 3 or 4 until it creates little dark spots or golden marks.

  • Step 8

    Fill it with traditional ingredients like prosciutto, stracchino or mozzarella cheese and arugula. Other delicious options include eggplant, tomato sauce and tuna....or maybe just cheese and tomatoes with pesto or fresh basil.... But let's not forget dessert! you can also fill it with Nutella, dulce de leche, strawberries and cream...I mean the imagination is the limit! Enjoy!!!
