Recipe Card

ingredients

  • 4 cups all purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/4 cup warm water

For the Ganache

ingredients

  • 1 1/2 cups dark chocolate
  • 2/3 cup unsalted butter
  • 1/2 cup cocoa powder
  • 1/4 cup granulated sugar
  • 1 cup hazelnuts, unsalted, roasted and finely chopped
  • 1 egg, beaten for brushing babka

For the Syrup

ingredients

  • 2 cups water
  • 1 cup granulated sugar
  • 1 cinnamon stick
  • 2 orange peels, sliced to strips
  • 1 star anis
  • Rose petals, for garnishing (optional)

Method

  • Step 1

    Preheat oven to 180°C / 350°F

  • Step 2

    Mix yeast with half the amount of water and set aside for 10min to activate.

  • Step 3

    Mix all dry ingredients in a standing mixer. Add the yeast.

  • Step 4

    Then add the oil, egg, vanilla & the rest of the water.

  • Step 5

    Knead on a medium speed until combined. Cover with plastic wrap and set aside for 45min.

  • Step 6

    On a lightly floured surface, divide the dough in half and start working with one half at a time. Roll out the dough into a triangle shape (35x25cm). Then, using a spatula, spread half the chocolate ganache evenly. Sprinkle roasted hazelnuts on top. When finished, use both hands to roll up the rectangle like a roulade starting from the long side and ending at the other long end

    Using a bread knife, slice the roulade in the middle - lengthwise.

  • Step 8

    Then start braiding the two. Place on a baking tray with a parchment paper. When they’re both ready, brush lightly with egg wash on top.

  • Step 9

    Bake for 35-40min.

  • Step 10

    While the Babka is in the oven, make the syrup. Boil the water, add the sugar until it dissolves and then add the Orange pill, cinnamon stick and star anise. Keep it hot on a low temperature until the Babka is ready.

  • Step 11

    As soon as the Babka comes out of the oven, use a ladle to pour the hot syrup on top of it slowly and let it soak for few minutes. Let it cool down for about 30min and slice it gently with a bread knife.
