Waffle Batter
ingredients
- 1 cup pancake mix
- 1 teaspoon vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup buttermilk (or whole milk)
Apple Topping
ingredients
- 1 honeycrisp apple
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 tablespoons unsalted butter
- 1/4 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves, optional*
- 1/4 cup Nutella®, for toppings
Method
Step 1
In a large mixing bowl, combine pancake mix, cinnamon, nutmeg, vegetable oil, egg, vanilla extract, and buttermilk. Whisk until well combined. Let batter rest for 5 minutes while prepping the waffle iron.
Step 2
Warm up a waffle iron. Fill each waffle well with around ¼ cup of batter and cook until crisp and golden brown. Around 5 minutes.
Step 3
In a large saucepan, melt butter. Add sliced apples, brown sugar, granulated sugar, salt, cinnamon, nutmeg, cloves, vanilla extract. Mix together until sugar has dissolved.
Step 4
Cook on low for 3-5 minutes while the sugars caramelize. Remove from heat and divide among waffles.
Step 5
Drizzle Nutella over each waffle. Serve immediately.
