Garlic Smashed Potatoes

ingredients
- 1 bag of mini tricolored potatoes
- 1/2 tablespoons salt
- 1 tablespoons olive oil
- 1 tablespoons melted butter
- 1 tablespoons minced garlic
- paprika, salt, and pepper to taste
Method
Step 1
Add potatoes and salt to a pot of water and boil for 15 minutes.
Step 2
Preheat oven to 450°F
Step 3
While the potatoes are boiling, line a baking sheet with parchment paper and drizzle with with oil (not the 2 tbsp). Spread oil around evenly with a brush or your fingers.
Step 4
Strain potatoes and place them on the baking sheet, leaving about 1-2 inches between each potatoes. Using a glass cup, smash the potatoes gently and use your finger to push the potatoes off the bottom of the cup (if it gets stuck).
Step 5
Mix garlic with 1/4 cup of olive oil and melted butter, then spoon the mixture onto each smashed potato. Make sure to get a little garlic onto each potato. And be careful not to put too much oil on each one because they'll get soggy.
Step 6
Season potatoes with paprika, salt, and pepper. Bake for 20-25 min or until they brown and crisp up. Enjoy!
