Meal Prep: Breakfast Ginger Cabbage

  • 1 whole green cabbage
  • 1 tablespoon butter
  • 1 cups chicken broth
  • 2 teaspoons minced garlic
  • 2 tablespoons minced ginger
  • 1 tsp salt
  • 1/2 tsp black pepper


  • Step 1

    In a soup pot over medium heat, sauté ginger and garlic in butter until aromatic. Add cabbage and sauté 2 minutes. Add broth, salt, and pepper, and cook until tender (about 10 minutes covered, stirring occasionally). Taste to see if it needs any more seasoning, since cabbage sizes can vary. To assemble: In a bowl use cabbage as the base, then top with cooked eggs and rice. Serve warm with a hot cup of coffee!
