Cranberry Walnut Stuffed Pears

ingredients

  • 2 tablespoons chopped unsalted walnuts
  • 3 ripe bosc pears, halved and cored
  • 2 tablespoons coconut sugar
  • 1 tablespoon liquid coconut oil
  • 1/2 teaspoon ceylon cinnamon
  • 2 tablespoons cranberries, chopped
  • 1/4 cup honey (or use sugar if vegan)
  • 1/4 cup water
  • 2 tablespoons freshly squeezed lemon juice
  • Coconut ice cream or coconut whipped cream

Method

  • Step 1

    Heat the oven to 350℉. Grease an 8 " x 8" baking dish with cooking spray.

  • Step 2

    In a large bowl, mix together the sugar, oil, and cinnamon. Then, add in the walnuts and cranberries. Mix until well combined.

  • Step 3

    Place the halved pears, facing up in the prepared baking dish. Fill the centers of the pear halves with the cranberry walnut mixture.

  • Step 4

    In another bowl, whisk together the honey, water, and lemon juice. Drizzle over the pears.

  • Step 5

    Bake in the oven for 30 minutes or until the pears are tender. Cool and spoon the sauce from the bottom of the pan over the cooked pears. Serve with dairy-free coconut ice cream or coconut whipped cream.
