Sweet Chilli Broccoli Noodle Stir Fry

ingredients
- 150 grams fresh egg noodles
- 1 tablespoon coconut oil
- 300 grams fim refried tofu
- 1/2 sliced into halves onion
- 3 cloves of minced garlic
- 1/2 head of cut into florets broccoli
- 1 teaspoon salt
- 2 tablespoons kechup manis
- 2 tablespoons honey or maple syrup
- 3 tablepoons sweet chilli sauce
Method
Step 1
In a medium pan, heat the coconut oil and add the onions. Fry for 1-2 minutes and then add the tofu and garlic. Cook until the tofu begins to golden (3-4 minutes).
Step 2
Meanwhile, whisk together the sweet chilli sauce, ketchup manis and honey. Also, in a small pot, cook the noodles according to the instructions. Add the salt to the tofu and then pour the sauce over, mixing well to coat.
Step 3
Add the broccoli and mix well. Turn off the heat and allow the broccoli to just turn a deeper green with thee residual heat.
Step 4
To serve, arrange the noodles into bowls and top with the tofu stir fry and pour over the sauce. Finish with fresh coriander, sliced chilli and sesame seeds.
