Looking for a breakfast or brunch recipe? Move over traditional french toast, and try this savory version instead. Cecilevidas suggests topping with grilled eggplant slices, crispy bacon, thyme, or pan-fried Chantelle mushrooms. Substitute the parmesan with shredded cheddar, or mozzarella. To take it to the next level, drizzle with any of these Brightland Olive Oils.
