Cecilevidas suggests topping with grilled eggplant slices, crispy bacon, thyme, or pan-fried Chantelle mushrooms. Substitute the parmesan with shredded cheddar, or mozzarella. ingredients

  • 1 brioche loaf
  • 3 free range eggs
  • 1 cup milk
  • 2 finely chopped spring onions
  • 1 finely chopped parsley
  • 2 sprigs of leaves removed thyme
  • salt and pepper, to taste
  • 3 tablespoons canola oil
  • 1/2 cup shredded parmesan cheese
  • Flakey sea salt, optional

Method

  • Step 1

    In a medium bowl whisk eggs and milk. Add spring onions, parsley, and thyme. Season with salt and pepper. Pour mixture into a 9x13 shallow baking dish.

  • Step 2

    Slice brioche into 8 slices Place each slice cut side down into egg mixture. Press down gently to flatten slightly. Soak for 10 minutes before flipping and leaving for another 5 minutes.

  • Step 3

    Heat a nonstick pan with the canola oil. Once canola oil is hot, place brioche slices, flat side down, into oil. Cook for 4 minutes on each side, or until golden brown.

  • Step 4

    To serve, top with shredded Parmesan and sprinkle with sea salt.
