ingredients
- 2 tablespoon olive oil
- 2 tablespook warmed marmalade
- 1 tablespoon red wine vinegar
- 1 1/4 tablespoons whole grain mustard
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 6 sausages
- 1/2 large cut into thick slices eggplant
- 1 quartered red onion
Method
Step 1
Pre heat the oven to 220℃.
Step 2
In the bottom of a baking dish mix together the olive oil, marmalade, red wine vinegar, mustard, salt and pepper. Add the sausages, eggplant and onion, mix to coat.
Step 3
Place into the oven for 15-20 minutes, mixing very 5 minutes ensuring to coat the sausages and veg with the sauce when you do.
Step 4
Remove from the oven when cooked and served with fresh parsley.
