ingredients

  • 2 tablespoon olive oil
  • 2 tablespook warmed marmalade
  • 1 tablespoon red wine vinegar
  • 1 1/4 tablespoons whole grain mustard
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 6 sausages
  • 1/2 large cut into thick slices eggplant
  • 1 quartered red onion

Method

  • Step 1

    Pre heat the oven to 220℃.

  • Step 2

    In the bottom of a baking dish mix together the olive oil, marmalade, red wine vinegar, mustard, salt and pepper. Add the sausages, eggplant and onion, mix to coat.

  • Step 3

    Place into the oven for 15-20 minutes, mixing very 5 minutes ensuring to coat the sausages and veg with the sauce when you do.

  • Step 4

    Remove from the oven when cooked and served with fresh parsley.
