ingredients
- 1 cup almond flour
- 1/8 cup vital wheat gluten or substitute collagen powder for gluten free
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup stevia
- 1/8 cup erythritol
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon instant coffee
- 1/2 cup butter
- 1/2 cup water
- 1/4 cup sour cream
- 1/4 cup cocoa
- 4 1/2 ounces dark chocolate
- 3/4 cup heavy cream
- 6 teaspoons cocoa
Method
Step 1
In a large bowl with together almond flour, vital wheat gluten, baking powder and baking soda. Set aside
Step 2
In a separate bowl with together eggs, stevia, erythritol, and sour cream. Set aside.
Step 3
In a small sauce pan melt the butter. Whisk in the water and 1/4 cup cocoa powder once it is complete melted.
Step 4
Add the chocolate mixture to the egg mixture. Once mixed combine fully with dry ingredients.
Step 5
Divide batter between 6 well greased mini bunt molds and bake at 350° for 24 minutes.
Step 6
Once bundt cakes are cool to the touch prepare your chocolate filling. Heat heavy cream in a sauce pan until it begins to bubble. Turn off heat and add dark chocolate stirring until fully combined.
Step 7
Arrange bundt cakes flat side down on plates. Spoon the filling mixture into the center of each cake until it slightly overflows.
Step 8
Sift the remaining 6 top of cocoa powder on the tops of the cakes and serve.
