Arayes, Meat Stuffed Pita

  • 15 pieces pita bread
  • 1 1/2 pounds ground beef
  • 2 chopped onions
  • 6 minced garlic cloves
  • 4 tomatoes, stems removed and chopped
  • 1 jalapeno, chopped
  • 3/4 cups olive oil, divided
  • 1 (15 oz can) tomato sauce
  • 2 tablespoons pomegranate molasses
  • Salt and Pepper to taste
  • 2 cups greek yogurt


  • Step 1

    Using your food processor pulse the chopped onions, garlic, and jalapeno till finely minced. Add the tomatoes, and pulse again till incorporated.

  • Step 2

    Add the ground beef. Pulse again. Add the tomato sauce, half the molasses and 1/4 cup olive oil. Mix again.

  • Step 3

    Pour the mixture into a colander and allow the water to strain for ten minutes or until it is just slowly dripping. Mix in the rest of the molasses, 2 tbsp olive oil, and season to taste.

  • Step 4

    Preheat the oven to 450 F. Slice the pita bread in half and coat the insides with olive oil.

  • Step 5

    Flatten 1/4 cup of the meat mixture into each piece of pita bread. Coat the outside with olive oil.

  • Step 6

    Bake for 12 to 18 minutes, flipping halfway through so both sides are crispy and meat is fully cooked. Serve with plain yogurt.
