ingredients
- 1 pound chicken tenders
- 2 eggs, beaten
- 2 cups Annie's Organic Cheddar Squares, crushed
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
Method
Step 1
Preheat oven to 425°F. Place a wire rack on a rimmed baking sheet.
Step 2
Beat the eggs in a shallow dish.
Step 3
In a separate shallow dish, combine the crushed crackers, salt, garlic powder, onion powder, black pepper, and olive oil. Mix until the olive oil is thoroughly dispersed throughout the mixture.
Step 4
Working one at a time, dip a chicken tender into the eggs, then roll in seasoned cracker mixture to coat evenly. Place on wire rack in a single layer.
Step 5
Bake for 15-20 min or until the internal temperature reaches 165°F. Let cool slightly before eating.
