Ingredients

rice paper

Avocado slices

Strawberries, sliced

Edible flowers

Yellow paper

Pea sprouts

Cooked black rice

 

For the sauce

1/4 cup coconut cream, chilled

2 tbsp red curry paste

2 tbsp agave

1/4 tsp lime juice

 

Method
Dip a rice paper wrap in warm water and lay it on a dry flat surface for 10 seconds until it becomes tacky. Layer the avocado slices, strawberry hearts, edible flowers, yellow pepper, and pea sprouts. Top the filling with 1/4 cup of cooked black rice and carefully roll the wrap.

For the sauce, blend together the chilled coconut cream, red curry paste, agave, and lime juice until smooth.
