- 2 cups plus 2 tablespoons whole wheat flour
- 3/4 cup all-purpose flour
- 1/3 cup coconut sugar
- 3/4 cup plus 1 tablespoon soy milk
- 2 tablespoons yeast
- 4 tablespoons vegan butter

For the Filling
- 4 tablespoons vegan butter
- 1/3 cup coconut sugar
- 1 tablespoon cinnamon
Method
Step 1
Place the flour, sugar, salt and yeast in your food processor. Add milk at room temperature and beat the dough on medium speed for 10 minutes. Then add the vegan butter and beat again.
Step 2
Remove the dough from its bowl and shape it into a ball. Place it in a large bowl covered with a towel, next to a warm place. Let it rise until it doubles (around 1 hour). Then take the dough out and knead it again with your hands for about 10 minutes and return it to the bowl and refrigerate overnight.
Step 3
Make your filling: mix all ingredient together. Store in fridge until ready to use.
Step 4
The next morning, knead your dough one more time and flour a rolling pin to roll your dough into a rectangle. Use a spatula to smooth the cinnamon filling. Then roll the dough into a log. Cut into equal slices and place them into a baking pan. Cover and let them rise again for 1 hour.
Step 5
Preheat oven to 350ºF. Once the rolls have risen, spread some soy milk on top with a brush. Then bake them four 25-30 minutes.
Step 6
Let them cool completely and add some vegan cream chose on top if wanted or eat them just like this!
