French Brioche

ingredients

  • 250 grams wheat flour
  • 40 grams sugar
  • 1 piece egg
  • 10 grams fresh yeast
  • 10 grams olive oil
  • 30 grams coconut oil
  • 20 grams coconut cream
  • a pinch of salt
  • 90 grams plant based milk
  • 90 grams maple syrup

Method

  • Step 1

    Mix the fresh yeast in a bowl with plant based milk of choice (not too warm, or too cold, around 100°F). Set aside 10 minutes.

  • Step 2

    In the bowl of your stand mixer with the dough hook attachment, add the yeast and milk mixture. Then pour the flour on it, add the egg, coconut cream, olive oil and salt. Knead for about 10 minutes.

  • Step 3

    Then add the solid coconut oil piece by piece and knead at the same time until well incorporated. Transfer the dough to another bowl, cover with some plastic wrap or a towel and let rise for 1 1/2 hours in a warm place.

  • Step 4

    Once the dough has risen, knead the dough for about 4-5 minutes to release the gases.

  • Step 5

    Separate the dough into three equal balls. Then using mainly your fingertips, roll out each ball into 3 equal sized lengths, about 10 inches long. Then, braid the three pieces together into one long braid and form a braid. Place the dough into a greased loaf pan and let rise for an hour, covered with a towel.

  • Step 6

    Preheat the oven to 350°F, and combine milk and maple syrup. Brush the top of the brioche with it. Bake for 20 minutes.

  • Step 7

    Remove from the oven and allow to cool completely before slicing. Enjoy!
