Winter This makes my heart warm immediately. This recipe serves 4 or a generous 2 servings. Red Bean Soup: 200g of red beans 700ml of water 120g of sugar Pinch of salt (100g Cooked Beans for Bean Paste) Glutinous Rice Balls (makes 16 pieces): 200g of sweet rice flour 2 tbsp of tapioca starch 250g of water Filling Black Sesame (4 pieces): 1 tbsp of sugar 1 tbsp of finely ground black sesame 1 tbsp of coconut oil Peanut (4 pieces): 1 tbsp of sugar 1 tbsp of finely ground peanuts 1 tbsp of peanut butter Bean Paste (4 pieces): 100g of previously cooked beans 70g of sugar pinch of salt Red Bean Soup 1) Boil 200g of red beans in boiling water for 5 mins. Strain the beans and remove the water. Boil the beans again for another 5 mins and strain to remove the water again. 2) Bring the beans to a boil in 700ml of water and cover. Once boiling, drop the temperature down to a simmer and cook for 30 more mins. 3) When the beans are soft, remove 100g of the beans to use for the red bean paste filling in the glutinous rice balls. 4) Add 120g of sugar and mix well with a wooden spoon. Cook till the soup becomes a little thick. Glutinous Rice Balls 1) Mix all the ingredients to form the dough and divide into 16 equal pieces. 2) Mix all the individual fillings in separate bowls. 3) Stuff the rice balls with the fillings, 4 black sesame, 4 sweet peanut, 4 red bean and 4 plain. 4) Bring the rice balls to a boil in a pot and when the rice ball starts to float to the top, cook for another 1-2mins more. 5) Pour out some red bean soup with a few glutinous rice balls and enjoy!
