ingredients

  • 1 cup uncooked rice
  • 1 pounds cod
  • 1/2 cup halved cherry tomatoes
  • 2 cloves minced garlic
  • 1/8 teaspoon cayenne pepper
  • 1 sprinkle of salt and pepper
  • 1 small thinly sliced lemon
  • 2 tablespoon olive oil
  • 1 tablespoon finely chopped fresh dill

Method

  • Step 1

    Start rice now as it’ll take by far the longest (unless you're using Trader Joe's microwave rice-- which is a weeknight godsend and only take 3-5 min).

  • Step 2

    Preheat oven to 400F. Pat dry fish and add to baking sheet/ dish. Sprinkle with salt, black pepper, and cayenne pepper. Layer on cherry tomatoes, garlic, and lemon slices. Drizzle with olive oil.

  • Step 3

    Bake for 12-15 min — do not overcook (see notes). Sprinkle with fresh dill and enjoy over rice.

  • Step 4

    DO NOT overcook your fish. It will be gross and exemplify why people complain about white fish. Set your timer for 10 minutes, and check if a) it’s opaque and b) it flakes easily with a fork. If so— pull it! If not, check again after 2 min. Repeat if needed
