Open Faced Peach And Prosciutto Sandwich With Honeyed Ricotta And Fresh Basil

Serves 4


4 slices of bread, toasted
1 cup ricotta
Zest of one lemon
1 tbsp honey, divided
2 peaches, sliced
2 tbsp chopped basil
4 slices prosciutto


Add the ricotta and lemon to a small bowl, season with salt and pepper and mix to combine.

Divide the ricotta among the 4 slices of bread and drizzle with honey. Add sliced peaches, prosciutto and chopped basil and enjoy.
