ingredients
- 3 cups shredded mozarella
- 2 ounces cream cheese
- 3 medium eggs
- 2 cups almond flour
- 1 tablespoons baking powder
- 1 tablespoons coarse salt
- 3 tablespoons melted butter
Method
Step 1
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Step 2
In a small bowl, whisk together almond flour and baking powder. Set aside.
Step 3
Add mozzarella and cream cheese to a large microwave-safe bowl. Melt cheeses in the microwave in 30 secs intervals. Stir after each 30 secs and continue cooking until cheeses are completely melted. Do not try to microwave the full time at once because some of the cheese will overcook.
Step 4
Add the cheeses and 2 eggs in the almond flour mixture. Mix well until a sticky ball is formed.
Step 5
Place them down on a plastic wrap. Lightly coat your hands with oil and divide dough into 8 equal parts. Roll each dough into ropes about 1 inch thick. ⠀
Step 6
Using a sharp knife, slice dough into 3/4 inch wide pieces. Place onto prepared baking sheet. Brush surface of pretzel bites with egg wash.
Step 7
Bake pretzels for about 12 minutes in the middle rack of your oven, or until pretzels are a light golden brown. Then broil for 2 mins. If you don't care about crisping the exterior, you can skip the broiling and just bake for a few more minutes at 400F until the pretzels are dark golden brown. ⠀
Step 8
Brush the bites with some melted butter and sprinkle tops of pretzels with coarse salt. That's it! Enjoy 😊 ⠀
