Spaghetti With Spinach Basil Pesto

Makes about 1 cup


2 cups spinach

1/4 cup basil leaves

handful mint leaves

1/2 cup olive oil

1/4 cup roasted walnuts

1/4 cup parmesan cheese

salt and pepper, to taste

1 lb spaghetti


Add spinach, basil, mint, olive oil, walnuts, parmesan cheese and salt and pepper to a high powered blender. Set aside. 

Bring a large pot of salted water to a boil. Add spaghetti and cook to al dente. Reserve some cooking water, then drain. 

Toss the cooked pasta with the prepared pesto, thinning with some of the cooking water, if needed.
