CHICKEN FRANKFURTERS AND EGG SAUCE

ingredients
- 3/4 cup Vegetable Oil,
- 2 small Onions, finely chopped
- 7 medium Tomatoes, finely chopped
- 3 medium Scotch Bonnet Peppers, finely chopped
- 6 pieces Chicken Frankfurters, diced
- 1 cube All purpose seasoning,
- 4 medium Eggs,
- 1 teaspoon Paprika,
- 1/2 teaspoon Thyme,
- Salt, to taste
Method
Step 1
Whisk your eggs with paprika, thyme and salt to taste. Set aside
Step 2
In a large pan or skillet, heat your oil on medium heat.
Step 3
Once your oil is hot, add your onions, tomatoes and scotch bonnet peppers and fry for about 2 minutes.
Step 4
Add your frankfurters with your all purpose seasoning and salt to taste. Cook for 3 minutes. Your sauce will be fragrant at this point.
Step 5
Stir your sauce and add your eggs. Leave to cook until the eggs have set. Your heat should still be on the medium setting.
Step 6
Once the eggs have set and the whites are visible, stir the eggs to mix with the other ingredients gently before leaving to cook for about 1-2 minutes more.
Step 7
Serve hot.
