ingredients
- 12 medium quartered Tomatoes
- 2 large quartered Onions
- 8 large halved Garlic cloves
- 1 teaspoon dried Parsley
- 1 teaspoon dried Fennel seeds
- 1 teaspoon dried Thyme
- 1 teaspoon Cayenne pepper
- 2 teaspoon Paprika
- 1 teaspoon Coriander powder
- 1 teaspoon Cumin powder
- 2 teaspoon Salt
- 4 tablespoon Olive oil
- 2 tablespoon Vegetable broth powder
Method
Step 1
In a large baking pan add: tomato, onion, garlic cloves, seasonings, herbs( no broth powder) & olive oil
Step 2
Coat vegetables in the oil and seasoning/herb mix; Grill for 15-20 min at 180 °C
Step 3
Remove from oven pan and place into bowl ; allow to cool for 10 min
Step 4
Once ingredients have cooled, add spoonful by spoonful of the mix into the blender; blend until smooth
Step 5
On low-med heat, add blended mix to saucepan with water; add quinoa
Step 6
Bring to boil; add broth powder; allow to simmer on medium heat for 20-30 min or until quinoa is translucent. Mix from the bottom to distribute quinoa
Step 7
Enjoy with whole-grain/gluten-free bread or as is!
