  • 5 large egg yolks
  • 1 tablespoon vanilla extract
  • 1/4 cup granulated sugar
  • 1 (13.5 ounce) can full-fat coconut milk
  • 2 (5.4 ounce) cans coconut cream
  • 3/4 teaspoon sea salt
  • 1/2 cup honey

Method

  • Step 1

    In a medium bowl, whisk together the egg yolks, vanilla extract, sugar, and salt until smooth.

  • Step 2

    In a small saucepan, combine the coconut milk and coconut cream. Heat over medium-low heat until just warm but not boiling. Remove from heat.

  • Step 3

    Slowly pour half of the warm coconut mixture into the egg yolk mixture while whisking constantly to prevent curdling.

  • Step 4

    Transfer the tempered egg mixture back into the saucepan with the remaining coconut mixture. Cook over low heat, stirring constantly, until the mixture thickens slightly and just begins to simmer. Avoid boiling to prevent scrambling the eggs.

    Remove from heat and stir in the honey until fully combined.

    Pour the mixture into the Ninja Creami container or your preferred ice cream maker's container. Allow it to cool slightly before freezing for 24 hours.
