Lemon Saffron Quinoa Salad

"lemon saffron quinoa salad: Water sauté 1 chopped shallot till soft. Add 1/8tsp +/- saffron threads and 1c quinoa. Cook till quinoa pops. Add 2-3c water and 3/4tsp h pink salt. Simmer till liquid is absorbed. Add zest and juice of 1 lemon, 1/4c chopped cilantro, lemon balm and basil combo. Serve over a bed of broccoli sprouts and topped with sprouted beans, toasted hazelnuts, spiralized golden beets and radicchio."
