ingredients

  • 200 gram of Speculoos cookies
  • 70 gram butter
  • 300 gram Philadelphia (or fresh cheese)
  • 500 gram of fromage blanc
  • 20 cl liquid cream
  • 3 eggs
  • 150 gram of unrefined whole cane sugar, melting
  • 200 grams of black grapes
  • 4 cs of sunflower honey
  • 1/2 cc of green anise
  • 1/2 cc of cinnamon
  • 1 star anise
  • 3 cloves

Method

  • Step 1

    Preheat the oven to 150 ° C. Put the Speculoos in a closed freezer bag and crush them by passing a rolling pin over it.

  • Step 2

    In a bowl mix the biscuit powder and the melted butter to obtain a lumpy but homogeneous paste.

  • Step 3

    Pour this dough into a mold covered with parchment paper (it facilitates demolding). Press well with the bottom of a glass. While cooling, prepare the rest.

  • Step 4

    Mix the Philadelphia, fromage blanc, cream, sugar and eggs and then pour over the bottom biscuit. Cook for 50 minutes in a hot water bath. Let the cheesecake cool completely in the oven before placing it in a cool place for 12 hours. Remove the cheesecake from the refrigerator 30 minutes before serving. Cut the grapes into two (the biggest).

  • Step 5

    Put the honey in a saucepan and melt over low heat.

  • Step 6

    Add the spices, mix and leave to reduce for a few minutes.

  • Step 7

    Remove the cloves (it is not pleasant for the one who would crunch in it) then let cool, it will thicken.

  • Step 8

    Arrange the grapes on the cheesecake, pour the honey into the spices and proudly serve your dessert.
