ingredients

  • 2 tablespoons unsalted butter
  • 1 1/3 cups blueberries
  • 1 1/3 cups blackberries
  • 1 1/3 cups raspberries
  • 1 cup granulated sugar
  • 1 1/2 teaspoons lemon zest
  • 1 teaspoon lemon juice
  • 1/2 cup unsalted butter
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • a pinch of salt
  • 2 tablespoons turbinado sugar

Method

  • Step 1

    Preheat oven to 350 degrees.

  • Step 2

    Rinse and fully dry berries.

  • Step 3

    Place 2 tablespoons of butter in the bottom of a 10 inch cast iron skillet. Place in the oven to melt the butter and begin warming the cast iron.

  • Step 4

    In a medium bowl, mix berries with 1/2 cup sugar, lemon zest and lemon juice. Set aside.

  • Step 5

    Melt 1/2 cup of butter in microwave.

  • Step 6

    In a large bowl or KitchenAid mixer, whisk together the eggs, melted butter, and vanilla on medium speed. Next, add 1/2 cup sugar, flour and a pinch of salt. Mix on medium speed until the ingredients resemble a smooth batter.

  • Step 7

    Remove cast iron skillet from the oven, and pour the berry mixture into the bottom.

  • Step 8

    Evenly pour the batter on top of the berry mixture. Optional: sprinkle 2 tablespoons turbinado sugar on top of batter.

  • Step 9

    Bake for 65-70 minutes, until the top is golden brown. Given all ovens are different, keep an eye on your cobbler for the last 5 minutes or so.

  • Step 10

    Let the cobbler rest for 5-10 minutes, and then serve warm with vanilla ice cream.
