Zesty Zucchini + Leek Air-Fried Fritters (GF)

ingredients
- 1 egg,
- 1 zucchini, grated
- 1 leek, finely chopped
- 1/4 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon basil
- 1 teaspoon oregano
- 2 teaspoons dried minced onion
- 1 tablespoon lemon juice
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1/2 cup shredded parmesan
- 1/4 cup pecorino romano
- flaky sea salt, for garnish
- red pepper flakes, for garnish
- Sir Kensington's Garlic Everything Sauce, for drizzle (optional)
Method
Step 1
Wash and grate the zucchini, using the large scale side of a box grater.
Step 2
Add 1 tbsp of course salt and stir it into the grated zucchini. Place mixture in a colander with a bowl under it, allowing it to rest for 10 to 15 minutes and water to be extracted.
Step 3
After water has been extracted, use paper towels to squeeze excess water out of zucchini until it is dry. Be sure to get all the water out to avoid mushy fritters. Place mixture in a clean and dry bowl.
Step 4
Add egg, spices, cheeses, and lemon juice to zucchini mixture. Stir until well blended.
Step 5
Place a parchment liner in the air fryer basket or grease it with oil to avoid sticking. I highly recommend parchment paper for easy clean up!
Step 6
Place zucchini mixture on the paper liner by the spoonful, shaping into round balls, about 1 inch apart. Lightly spray with oil. I used avocado oil.
Step 7
Close air fryer and cook on 360°F for 12 minutes. Flip them, spray the other side, and place back in air fryer for 10 minutes or until crispy.
Step 8
Drizzle with Sir Kensington’s Garlic Everything Sauce — or any sauce of your choosing! Garnish with a sprinkle of flaky sea salt (I used Maldon) and red pepper flakes.
Step 9
Serve with lemon wedges for squeezing over the fritters.
