I love to prep chicken salad for easy & healthy lunches throughout the week and this twist on classic chicken salad might just be my new favorite way to make it. This Jalapeños Chicken Salad is made with ingredients like bacon, shredded cheddar cheese, jalapeños, diced red onion, mayo and Greek yogurt, making it the perfect lunch, dinner or snack! You can eat it in a wrap, on toasted bread, over a salad, with your favorite crackers or even on its own. I find that this gets even better as it sits in the fridge and all of the flavors marinate together, making it especially great for meal prep.

  • Not only is this recipe delicious, packed with flavor and perfect for meal prep, but it is SO simple to make. The directions for this recipe are very straightforward - add all of the listed ingredients to a bowl, mix & serve!
  • This recipe can easily be made gluten-free by choosing a gluten-free option to serve it with - on a lettuce wrap, GF bread, wraps or crackers.
  • I prefer to use shredded rotissare chicken in my chicken salads because I find that it is the easiest, however feel free to use whatever diced/shredded chicken that you have on hand.
  • To make my chicken salad recipes lighter, I like to use a mix of mayo and plain Greek yogurt. My favorite mayo to use is Chosen Foods Avocado Oil Mayo. If you don't have plain Greek yogurt on hand, feel free to substitute it for sour cream. They add the same flavor, however I like to use Greek yogurt for added protein.
  • If you like some added spice, feel free keep the seeds in for 1-2 of the jalapeños!
  • The options are endless when it comes to serving - on toasted bread, a wrap, lettuce wrap, over greens, with crackers, by itself... you can't go wrong!
