  • 3 sweet potatoes, spiralized/julienned
  • 5 tablespoons olive oil, divided
  • 1 bunch kale
  • 2 cloves garlic
  • Cayenne, to taste
  • Salt, to taste
  • 1/ 4 cup tahini
  • Juice from 1 lemon
  • Cumin, to taste
  • Garlic powder, to taste
  • Water, to thin


  • Step 1

    Heat 2 tbsp olive oil in a skillet over medium high heat. Add spiralized sweet potatoes and toss to coat with olive oil. Add a couple tablespoons of water and cover, and allow to steam, for about 5 minutes. Add kale, cayenne, salt and pepper. Toss, and continue cooking until kale wilts.

  • Step 2

    To make the dressing, whisk tahini, lemon juice, cumin, garlic powder, cayenne, salt, pepper, and water to desired consistency. Drizzle over sweet potatoes and serve immediately.
