For the salad

  • 4 cups mixed greens
  • 1 avocado, sliced
  • 1 grapefruit, peeled and sliced
  • 2 mandarin oranges, peeled and sliced

For the crumble

  • Juice from 1/2 lemon
  • Juice from 1/2 an orange
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/4 teaspoon kosher salt
  • 1 tablespoon olive oil

Method

  • Step 1

    In a large bowl, mix the mixed greens, sliced avocado, sliced grapefruit, and sliced mandarin oranges.

  • Step 2

    Add the Cascadian Farm Oats and Honey Granola and pistachios to a food processor. Pulse the mixture until roughly chopped.

  • Step 3

    In a small bowl, combine the lemon juice, orange juice, Dijon mustard, honey, salt, and olive oil. Whisk until thoroughly combined.

  • Step 4

    Pour the dressing over the salad and top with the granola and pistachio crumble.
