Clean out the fridge days can be challenging, but when you throw it all into a soup, the world looks brighter. Use whatever vegetables you have on hand, vegetable broth, and plenty of spices. Plant-based and wonderful, you can have a bowl for dinner and reheat the leftovers for another day!

Serves or Makes: 2-3


  • 3 1/ 4 cups vegetable broth
  • 1 1/ 4 cups peas
  • 3/ 4 cup broccoli
  • 3/ 4 cup cauliflower
  • 1 large handful spinach
  • 3-4 fresh sprigs mint
  • 2/ 3 cup coconut milk
  • 1/ 2 lemon, juiced
  • Salt, to taste
  • Black pepper, to taste


  • Step 1

    In a large pot, stir the vegetable broth, peas, broccoli and cauliflower. Bring to a boil and then simmer over medium heat, stirring occasionally, until all vegetables are very tender, about 15 minutes.

  • Step 2

    Transfer the mixture to a blender and add spinach, fresh mint and lemon juice. Puree the soup until velvety smooth. Stir in the coconut milk and season with salt and pepper to taste. If the soup is too thick, thin out with more water.
