Recipe Card

ingredients

  • 3 1/4 cups vegetable broth
  • 1 1/4 cups peas
  • 3/4 cup broccoli
  • 3/4 cup cauliflower
  • 1 large handful spinach
  • 3-4 fresh sprigs mint
  • 2/3 cup coconut milk
  • 1/2 lemon, juiced
  • Salt, to taste
  • Black pepper, to taste

Method

  • Step 1

    In a large pot, stir the vegetable broth, peas, broccoli and cauliflower. Bring to a boil and then simmer over medium heat, stirring occasionally, until all vegetables are very tender, about 15 minutes.

  • Step 2

    Transfer the mixture to a blender and add spinach, fresh mint and lemon juice. Puree the soup until velvety smooth. Stir in the coconut milk and season with salt and pepper to taste. If the soup is too thick, thin out with more water.
