Chocolate Dipped Salted Almond Date Cookies

Recipe for 18-20 cookies
Ingredients:
1 ½ cup almonds
½ cup GF rolled oats
1 cup dates, pitted
1 tsp vanilla extrakt
½ tsp sea salt
½ cup dark chocolate, melted
Directions:
In a food processor, blend all ingredients (except chocolate) until a thick dough that clumps together forms. But do not over process: the texture has to stay slightly crunchy and you should see small pieces of almonds and oats.
Roll dough into 18-20 balls and arrange on a baking sheet lined with parchment paper.
Flatten cookies and use a fork to make criss-cross lines on the top of each cookie. Sprinkle with some more sea salt and dip a third cookie into melted chocolate.
Store in the fridge for up to two weeks.
